Ox In The Mire Chocolate Chip Cookies...

Ox In The Mire Chocolate Chip Cookies

Yesterday was a most unique Sabbath for our neighborhood (check out yesterday's blog post to find out why. It can be accessed: HERE). Kids, parents, even grandparents came out to do very non-Sabbath day activities. My wife and daughter did what they could do--they baked cookies.

The cookies weren't for home/visiting teaching families, they weren't for a family function; they were made to lift the spirits of the volunteers and to provide some much-needed nutrition. Said one volunteer, "Tell you wife she saved my life." I'm sure this was not a literal thought, but the message was clear.

Today--the day after--we still have many a chocolate chip cookie in the house. They're so good, it's almost scary so I thought I'd share the recipe. Our recipe book calls them "Mrs. Field's Cookies" but I call them the "Ox In The Mire Chocolate Chip Cookies." I apologize if the name conjures an unappetizing desert treat. I assure you this is not the case.

Directions:

1 lb. butter
1 1/2 cup sugar
2 cups brown sugar

Cream well

Add: 3 eggs and 2 teaspoons vanilla, beat for 4 minutes
Add: 6 cups flour with 1 1/4 teaspoons salt, 1 1/2 teaspoons soda
Then 2 or 3 packages of chocolate chips (12 oz. size--Ghirardelli 60% cacao bittershweet chocolate chips is a Taylor family favorite).
3 packages is good, but 2 will do...

Line a cookie sheet with wax paper. Use ice cream scoop to dish out the cookies.
Bake at 350 degrees for 8-10 minutes.
Cookies won't look brown or done.
Let stand 3-5 minutes (if possible...) before removing them from the cookie sheet and devouring them IMMEDIATELY!

It's so simple...and so tasty!

Tonight as we gathered as a family I explained that sometimes we're called upon to do things on Sunday because of the situation, the "ox in the mire" situations. Hence the name of these delectable cookies!
